This time of year (February) the Sonoran Desert is covered in wild henbit (Lamium amplexicaule).
All above-ground portions of this member of the mint family are edible and super mild.
It also makes for a great ground cover with its dense low growth habit.
My plan this year is to blanche and freeze a ton for use in soups.
There's so much food to be foraged if you know where to look! And to think someone was just lamenting to me about their bill for a weed company to spray all the henbit in their yard and poison their land and ecosystem rather than cook it up for dinner ðŸ˜
Anyone have any good uses for henbit??
(there's also a wild arugula and mallow in this photo which are both edible "weeds" here too)
